The production process begins with preparing the kiln, a domestic furnace divided into two sections: a lower chamber called the «hornilla,» where the fire is generated, and an upper section where the limestone is placed. Before starting a new batch, it is essential to clean the hornilla of any residues from previous firings. Then, the inside of the kiln is coated with clay to seal cracks and ensure that heat does not escape during the calcination process. This layer of clay, once fired, acts like a pot that helps retain heat inside the kiln, ensuring uniform cooking of the limestone.
